Incredibly easy to make, this delicious and healthy quiche is filled with a wealth of greens, perfectly complemented by soft goat cheese. Use store-bought puff pastry for the quiche base. After baking, the crust will be airy, crisp, and crumbly, contrasting beautifully with the creamy filling. For greens, choose winter greens, such as crisp kale or Swiss chard, or a combination of the two. Sauté them with garlic first to wilt and soften them, then layer them on the dough with the cheese and pour the creamy mixture over them. Allow the quiche to cool slightly for easier slicing, then serve.

Ingredients:

  • 1 package (150g) chopped winter greens, such as kale and/or Swiss chard (about 8 cups)
  • 1 sheet frozen puff pastry, thawed (half a 500g package)
  • 1 tbsp. l. olive oil
  • 1 tbsp unsalted butter
  • 2 cloves garlic, thinly sliced
  • Premium flour for work
  • 150 g goat cheese, crumbled (about 3/4 cup)
  • 0.5 cup grated Parmesan (about 30 g)
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 tsp ground nutmeg
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 220°C.
  • Step 2
  • In a large skillet, heat the olive oil and butter over medium-high heat. Add the garlic and cook until softened, about 1 minute. Add the herbs and 1/2 teaspoon of salt; cook, stirring occasionally, until the herbs are wilted and most of the liquid has evaporated, 5-7 minutes.

  • Meanwhile, on a lightly floured surface, roll out the puff pastry until it's large enough to fit a 9-inch pie pan. Place the dough in the pan and trim off any excess; crimp the edges, if desired. Spread goat cheese and Parmesan cheese over the dough, and top with the sautéed herbs.
  • Step 4
  • In a medium bowl, whisk the eggs with the heavy cream, nutmeg, 1/2 teaspoon salt, and 1/4 teaspoon black pepper; pour the mixture over the greens. Bake until the crust is golden and the filling is set, about 20 minutes. Slice and serve.
