This quick "guests on the doorstep" dish is ready in minutes using frozen salmon. A slow cooker with its foolproof pressure cooker function will come to the rescue, quickly infusing the fish with all the flavors of the other ingredients—in this case, soy sauce, ginger, and lime. Keep in mind that the thicker, fattier cuts of the center cut of fish are best cooked in a pressure cooker. Serve the salmon with cooked rice, drizzled with the remaining delicious sauce and sprinkled with fresh herbs.


Ingredients:

  • 4 frozen skinless salmon fillets, preferably thick center cut (about 170g each)
  • 3 tablespoons soy sauce
  • 1 teaspoon finely grated lime zest
  • 3 tbsp freshly squeezed lime juice + wedges for serving
  • 3 tbsp. l. brown sugar
  • 2 tbsp. l. sesame oil
  • 1 teaspoon finely grated peeled ginger root
  • 1/4 tsp freshly ground black pepper
  • 2 tbsp finely chopped green onions
  • 3 tablespoons of cilantro leaves
  • Boiled rice, for serving
  • Special equipment: multicooker with a capacity of 6-8 liters.
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a slow cooker, combine the soy sauce, lime zest and juice, brown sugar, sesame oil, ginger, and pepper. Set the cooker to high heat for 3 minutes (see Note) and cook, stirring the sauce with a wooden spoon. Add the salmon fillets, turning them over to coat with the sauce (it's okay if the pieces overlap).
  • Step 2
  • Following the manufacturer's instructions, close the lid and prepare the multicooker for use. Set the pressure cooker to low heat for 1 minute. Once the cycle is complete, release the pressure according to the manufacturer's instructions.
  • Step 3
  • After 2 minutes, being careful not to burn yourself with any remaining steam, open and remove the lid. Check the fillet for doneness by carefully cutting into it. If you prefer your salmon more done, cook for another minute on high heat using the broiler setting.
  • Step 4
  • Using a metal spatula, carefully transfer the salmon fillet to a serving platter. Set the broiler to high heat and cook the sauce for 3 minutes, stirring frequently, until thickened. Pour the sauce over the fish.
  • Step 5
  • Sprinkle with green onions and cilantro and serve with rice and lime wedges.
