Finnish Blueberry Pie is a delicious, slightly sweet treat with a crispy crust that's super easy and quick to make!


Ingredients:


For the test:
  • 150 g butter
  • 100 g of sugar
  • 1 egg
  • 1 teaspoon baking powder
  • 150 g of wheat flour (spelt flour is also possible)

For filling:
  • 100 g of low-fat cottage cheese
  • 125 ml natural yogurt
  • 50 g of sugar
  • 1 egg
  • 1 pack of vanillin

For the filling:
  • 0.5 kg blueberries (garden blueberries)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine room-temperature butter with sugar in a bowl and beat with a mixer. Then add the egg.
  • Step 2
  • Divide the flour in half. Sift the first half of the flour and mix it with the baking powder. Add it to the bowl with the egg, and mix everything together using a mixer.
  • Step 3
  • Then add the second half of the flour and knead the dough with your hands until it is soft and pliable.
  • Step 4
  • Grease a tart or pie pan with butter. Place the dough in the pan and press it evenly along the bottom and up the sides with your hands.
  • Step 5
  • Prepare the filling. Combine the cottage cheese, yogurt, vanilla, sugar, and egg in a bowl. Whisk until smooth and pour over the dough.
  • Step 6
  • Wash the blueberries thoroughly and lay them out on a towel to dry. Then transfer them to the pie filling.
  • Step 7
  • Place the pie pan in the oven preheated to 200 degrees for 30-45 minutes.
  • Step 8
  • After cooking, let the blueberry pie cool, cut into portions and serve!
