Oatmeal with almonds and blueberries

This healthy steel-cut oat porridge takes on a dessert-like quality thanks to the incredibly delicious blueberry sauce with maple syrup drizzled over it when serving. The sauce is made with fresh blueberries. For added crunch, top the porridge with toasted flaked almonds.

Ingredients:

  • 1 tbsp. chopped oats
  • 1 cinnamon stick
  • Coarse salt
  • 0.5 cups chopped almonds
  • 1 tbsp unsalted butter
  • 1 cup fresh blueberries
  • 1 tbsp natural maple syrup + extra for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium saucepan, bring 3 cups of water to a boil over high heat. Add the oats, cinnamon stick, and 1/2 teaspoon of salt. Reduce heat, cover, and simmer, stirring occasionally to prevent burning or boiling over, until the liquid is almost completely absorbed and the oats are tender, 15-20 minutes.
  • Step 2
  • Meanwhile, in a medium skillet over medium-high heat, toast the almonds, stirring, until lightly golden, about 3 minutes. Transfer to a plate. Add the butter to the skillet and, once melted, add the blueberries and cook, stirring, until softened and releases their juices. Stir in the maple syrup and remove from the heat.
  • Step 3
  • Remove the cinnamon stick from the oatmeal and divide it into 4 deep bowls. Drizzle with blueberry sauce and sprinkle with toasted almonds. Serve with maple syrup.
