Slow and steady wins the race! To ensure soft and fluffy scrambled eggs, cook them over low heat and stir them slowly. A simple scrambled egg requires only eggs and butter, but if desired, you can add a little of your favorite grated cheese at the very end. Cheddar or Gruyere work well.

  • 8 large eggs
  • 2 tablespoons unsalted butter
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • In a medium bowl, lightly beat the eggs with 3/4 teaspoon salt and a little pepper.

  • In a medium nonstick skillet, melt 1 tablespoon butter over low heat, swirling the pan to coat the bottom and sides.
  • Step 3
  • Add the eggs and cook slowly, stirring occasionally with a silicone spatula, until most of the liquid has thickened and the eggs are soft, about 10 minutes. If you prefer firmer eggs, cook for another 2-3 minutes. Remove the pan from the heat and carefully stir in the remaining 1 tablespoon of butter. Serve hot.
