Strawberry Tarts


How to Make Strawberry Tarts

The base for this dessert is made from crushed and pressed Maria cookies and piloncillo (cane sugar), which adds a caramel note to the flavor. Fill them with an airy cream cheese and strawberry filling, and you're ready to make these adorable tartlets! This recipe makes 6 individual tarts or one 22cm tart.


Ingredients:

  • 1.5 cups hulled strawberries, cut into quarters
  • 0.5 cup sugar + 3 tbsp.
  • 140 g Maria biscuits (about 1 package or 32 biscuits) or graham crackers
  • 1/4 cup packaged chopped piloncillo (see Note)
  • 8 tbsp (110 g) chilled unsalted butter, diced
  • 1 package (220 g) of cream cheese, room temperature
  • 0.5 cup sour cream
  • 1/4 cup dry whipping cream
  • 6 individual tart moulds with removable bottoms or 1 22cm diameter mould.

Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine the strawberries in a small bowl with 3 tablespoons of sugar. Let the strawberries sit at room temperature for 1 hour.
  • Step 2
  • Preheat oven to 350°F (175°C). Line a baking sheet with 6 tart shells with removable bottoms. Spray the shells with cooking spray. Combine the Maria crackers and piloncillo in a food processor and process until coarse crumbs form.
  • Step 3
  • Add the butter and pulse until the crumbs are smooth. Spread the crumbs into the prepared pans and press into an even layer. Bake until the tartlets are golden brown, about 10 minutes. Let cool completely.
  • Step 4
  • Using a mixer, beat the cream cheese in a small bowl with the sour cream until fluffy. Add the remaining 0.5 cups of sugar and beat until smooth. Add the heavy cream and beat until very fluffy.
  • Step 5
  • Drain the strawberries, reserving 2 tablespoons of liquid. Stir the strawberries and the remaining 2 tablespoons of liquid into the cream. Spoon the filling into the tartlets. The tarts can be made 1 day in advance, covered, and refrigerated.

    Note*

    Galletas Marias are round, sweet vanilla cookies. They can be substituted with graham crackers.

    Piloncillo is often used in Mexican cuisine to sweeten drinks and desserts. It's unrefined cane sugar, usually in small cones. It can be substituted with densely packed brown sugar.
