This Daiquiri is easy to make in a blender and proves you don't need alcohol to enjoy yourself. It's a great way to use up extra strawberries during the peak season or simply treat yourself to a holiday treat. The cocktail is not too sweet, refreshing, and sure to please. Instead of rum, we added a splash of citrus soda. If you're looking to try the new trend of non-alcoholic rum, you can add a little, but the cocktail is delicious without it.

Ingredients:

  • 2 cups fresh strawberries or 1 bag (280 g) frozen strawberries + 1 berry, halved, for serving
  • 1 cup ice or lime ice cubes
  • 3/4 cup citrus soda, such as Sprite or San Pellegrino
  • 90 ml non-alcoholic rum, such as Lyre's White Cane Spirit
  • 5 tablespoons light agave syrup
  • 1/4 cup lime juice
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Add strawberries, ice, citrus soda, non-alcoholic rum, agave and lime juice to a blender and blend until smooth.
  • Step 2
  • Serve in two tall glasses or daiquiri glasses, garnishing the rims with strawberry halves.

    Lime ice:

    If you have limes or lemons that are about to spoil (or you just have a lot of them), juice them and freeze them in ice cube trays. A standard ice cube tray contains about 2 tablespoons (30 ml) of juice, making it easy to measure out into cocktails. This is a great way to prepare ahead and preserve precious juice.
