For those who strive for healthy eating but are picky about their vegetable dishes, chefs have used a trick. In this Latin American-inspired stuffed sweet potato, the carrots, onions, and tomatoes are cut into small pieces—they're almost invisible when cooked with ground beef.

Ingredients:

  • 350 g lean ground beef
  • 4 pcs small sweet potato, clean and wash
  • 4 medium carrots, 2 chopped and 2 grated
  • 1/2 medium onion, chopped
  • 1 plum tomato, chopped
  • 2 cloves of garlic
  • 2 tablespoons plus 1 teaspoon red wine vinegar
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 2 tbsp. l. olive oil
  • 1/4 cup chopped cilantro
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prick each sweet potato several times and microwave for about 10 minutes, until easily pierced with a fork. Turn the sweet potato over halfway through cooking.
  • Step 2
  • Place the chopped carrots, onion, tomato, garlic, 2 tablespoons vinegar, cumin, 1 teaspoon salt, oregano, cayenne pepper, and a couple of pinches of black pepper in a food processor; pulse until finely chopped. Heat the oil in a large nonstick skillet over medium-high heat.
  • Step 3
  • Add the vegetable mixture and cook, stirring constantly, for 3-4 minutes, until the vegetables are wilted. Pour in 1/4 cup water and cook for about 1 minute, until the liquid has evaporated, scraping up any browned bits with a wooden spoon. Add the ground beef and cook for about 4 minutes, stirring and breaking the meat up into small clumps, until browned and cooked through. Remove from heat.
  • Step 4
  • Cut the sweet potato in half, scoop out some of the warm flesh, and add it to the ground meat; stir. Divide the sweet potato halves among servings and generously stuff each with the ground meat mixture. In a medium bowl, combine the grated carrots, cilantro, the remaining 1 teaspoon of vinegar, and 1/4 teaspoon of salt. Divide the salad among plates.
