Make mini Mexican-style sandwiches using pambaso buns filled with chicken in a spicy red salsa. Red salsa, or salsa roja, is a traditional and one of the most popular sauces in Mexican cuisine. It's made from tomatoes, chili peppers, and spices, then blended until smooth. Red salsa is used in many Mexican dishes, including sandwiches, to give them a distinctive spicy flavor. Mini pambaso sandwiches with chicken in red sauce are bite-sized, making them perfect for a buffet or party.


Ingredients:


Pambaz buns
  • 7 g dry yeast
  • 170 ml (2/3 cup) warm water
  • 500 gr. (3 and 1/3 cups) bakery flour
  • 1 tbsp. sugar
  • 1 teaspoon of salt
  • 100 g of lard at room temperature

Chicken sandwich
  • 1 large boneless, skinless chicken breast (about 200g)
  • 500 ml (2 cups) water
  • 3 pink peppercorns
  • Half a white onion, chopped
  • 2 cloves of garlic
  • 1 teaspoon of salt
  • 1 bay leaf
  • 1 tbsp. white vinegar
  • 4 Pambaz buns, recipe included
  • Lettuce leaves, crumbled cheese, potatoes to taste

Red salsa (Salsa roja)
  • 125 ml (0.5 cup) water
  • 2 whole tomatoes
  • 1 red chili pepper, coarsely chopped
  • 1/4 white onion
  • 0.5 tsp salt
  • 7 g (1/4 cup) cilantro leaves
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Dissolve the yeast in a small amount of warm water and let it sit for 5 minutes or until bubbling. Then add the remaining water.
  • Step 2
  • Place the flour, sugar, and salt in a large bowl. Using your hands, stir in the softened lard and yeast. Add more water if necessary to form a smooth, pliable dough. Continue kneading the dough on a lightly floured surface for about 15 minutes, or until elastic and shiny.
  • Step 3
  • Form the dough into a ball, place it in an oiled bowl, cover with a clean towel (kitchen towel) and let rise in a warm place for about 2 hours, or until the dough has doubled in size.
  • Step 4
  • Press the dough down and knead it lightly. Cut the dough into 20 equal pieces and form walnut-sized balls. Lightly roll the balls with a rolling pin into an oval shape. Place them on a baking sheet lined with parchment paper, cover with a towel, and let them rest for another hour.
  • Step 5
  • Preheat oven to 180°C. Bake the pambaso for 15 minutes or until golden brown.
  • Step 6
  • Now the buns are ready to make sandwiches, for example, with a filling of chicken with red salsa.
  • Step 7
  • Prepare red salsa


    Place all ingredients except salt in a small saucepan and heat over high heat. Bring to a boil, reduce heat, and simmer for 5 minutes.

    Remove the tomatoes, leaving the water in the pan. Carefully peel the skins off the tomatoes. Combine all ingredients, including water and salt, in a blender and blend until smooth. Store the sauce in the refrigerator for up to 3 weeks..
    Exit: 1.5 cups salsa
  • Step 8
  • Make chicken with red salsa


    Place all ingredients except the pambosa and salsa in a saucepan and place over medium heat. Bring to a boil, then reduce heat to low and simmer for 30 minutes, or until the chicken is very tender. Remove the chicken from the broth and shred with 2 forks.

    Stuff the chicken into the pambaso while it's still hot, top with salsa and serve.
