The undeniable advantage of homemade ice cream is that you know it's made with fresh, natural ingredients, and you can customize it to your liking. Make ice cream with the interesting flavor of eggnog, the American Christmas drink similar to our eggnog, which consists of eggs, milk, sugar, nutmeg, cream, and whiskey. Make a cream using the same ingredients and finish it in an ice cream maker.


Ingredients:

  • 4 egg yolks
  • 1/3 cup sugar
  • 0.5 l of whole milk
  • 1 cup heavy cream
  • 1 tsp. grated nutmeg
  • 90 ml of bourbon
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In the bowl of a stand mixer, beat the egg yolks and sugar until the yolks are light in color and the sugar is completely dissolved.
  • Step 2
  • In a medium saucepan, combine the milk, heavy cream, and nutmeg over high heat and bring to a boil, stirring occasionally. Remove from the heat and temper the yolks, gradually whisking in the hot mixture. Then, return everything to the saucepan and cook until the mixture reaches 160°F (71°C). Remove from the heat, stir in the bourbon, pour into a medium bowl, and refrigerate. Chill the mixture in the refrigerator to 40°F (4°C), about 4-6 hours.
  • Step 3
  • Once the mixture has cooled, prepare the ice cream in an ice cream maker according to the manufacturer's instructions. Serve the soft-serve ice cream immediately, or transfer it to an airtight container and freeze for 2-4 hours to firm up.
