Peppermint Marshmallow Snowmen


How to Make Peppermint Marshmallow Snowmen

These adorable marshmallow snowmen are perfect for the winter holidays. Making these treats is also a fun way to spend time with kids. Their soft and fluffy texture literally melts in your mouth. The fresh mint flavor inside each snowman also makes them extra special.


Ingredients:

  • 1 cup powdered sugar, plus extra for dusting the pan and dipping the cookie cutters
  • 3 packages unflavored powdered gelatin (about 3 tablespoons)
  • 1.5 cups of sugar
  • 1 cup light corn syrup
  • 1/8 tsp salt
  • 1/2 tsp peppermint extract
  • 1/3 cup cornstarch
  • 12 black licorice dome gummies
  • 6 marmalade candies in the form of straws
  • 6 sticks of salted straw, broken in half
  • 12 small orange candies, such as Tic Tacs
  • 1/2 cup dark chocolate, chopped or in teardrop pieces
  • Special equipment: 12 lollipop sticks; 11 x 15-inch baking pan; candy thermometer; 1/4-inch, 1/4-inch, and 1/4-inch round cookie cutters; piping bag with a small tip
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Dust a 28cm x 38cm baking pan with powdered sugar. Pour 1/2 cup cold water into the bowl of a stand mixer fitted with a whisk attachment and whisk in the gelatin, distributing it evenly.
  • Step 2
  • Meanwhile, to prepare the marshmallowsIn a small saucepan, combine the sugar, corn syrup, salt, and 1/2 cup water. Bring to a boil over medium-high heat. Cook, shaking the pan occasionally but not stirring, until a candy thermometer registers 115°C (6-7 minutes).
  • Step 3
  • With the mixer running on low speed, slowly pour the sugar syrup into the gelatin mixture. Once finished, increase the speed to high and beat until the mixture turns bright white with stiff peaks, and the bowl has cooled to just warm at the bottom (8-10 minutes). Add the peppermint extract and mix well. Pour the mixture into the prepared pan, smooth the top, and sprinkle generously with powdered sugar. Let it sit overnight before cutting.
  • Step 4
  • When you're ready to build snowmenIn a small sieve, combine 1 cup powdered sugar and cornstarch. Generously dust the work surface with some of the mixture and turn out a marshmallow layer in one piece. When removing it from the pan, you will need to hold it in place with an offset offset spatula and your fingers. Dust both sides of the layer generously with the cornstarch mixture. Using round cutters (2 cm, 3 cm, and 4 cm in diameter) pre-dipped in powdered sugar, cut out 12 marshmallows of each size. Dust the circles on all sides with the remaining cornstarch mixture.

    Note

    If the humidity is very high on the day of baking, you can lightly grease the cookie cutters with vegetable oil to make the marshmallows easier to cut out. If the circles are too sticky, dust them with a mixture of powdered sugar and cornstarch.

  • Step 5
  • Build snowmen on lollipop sticks, starting with the largest marshmallow. Thread a licorice gummy candy onto each to create a hat. Cut the gummy candies in half lengthwise with scissors. Roll the resulting ropes with a rolling pin to create flat scarves for the snowmen. Tie them off. Insert salted straw sticks into the middle marshmallow circles to create arms. Use orange candies for noses.
  • Step 6
  • Melt the dark chocolate in a small bowl, microwave on 50% power for 15-second intervals, stirring occasionally (45 seconds to 1 minute). Stir until smooth and transfer to a pastry bag fitted with a small round tip. Pipe chocolate eyes, a mouth, and buttons onto the surface of each snowman.
