Vegetarian shawarma with chickpeas and dill hummus dressing

A juicy and delicious vegetarian shawarma with vegetables and chickpeas, which add a satisfying texture and unique flavors to the dish. The chickpeas are pre-boiled and then baked in the oven with spices and a little olive oil until golden brown and slightly crispy. Wrap the spiced chickpeas with cucumbers, tomatoes, lettuce, and onions in a pita bread and drizzle with hummus and dill sauce. A delicious and healthy snack.

Chickpeas
- 2 cups boiled and drained chickpeas
- 1 tbsp. l. olive oil
- 0.5 tsp ground cumin
- 1/4 tsp ground coriander
- 1/4 tsp paprika
- 1/8 tsp cayenne pepper
- 1/8 tsp ground cinnamon
- 4 lavash
Hummus dressing with dill
- 0.5 cup hummus
- 1/8 cup lemon juice
- 2 tbsp chopped dill
- 1 clove garlic, minced
For serving
- Half a cucumber, cut lengthwise and sliced into 0.5 cm thick half-circles.
- 2 tbsp. shredded romaine lettuce
- 1 large tomato, thinly sliced
- 1/3 cup thinly sliced red onion

Preparation:
- Step 1
Chickpeas:
Preheat oven to 220°C. In a large bowl, combine chickpeas, olive oil, cumin, coriander, paprika, cayenne pepper, cinnamon, and a pinch each of salt and black pepper. Stir.
Step 2- Place on a rimmed baking sheet and bake until the chickpeas are golden brown and slightly crisp, 25 to 30 minutes. Step 3
- Wrap the tortillas in foil and place them in the oven during the last 2 minutes of roasting the chickpeas to reheat them. Step 4
Dill Hummus Dressing:
Meanwhile, whisk together the hummus, lemon juice, dill, and garlic. Add water if necessary to achieve the desired consistency.
Step 5To serve:
Evenly distribute the cucumber, lettuce, tomato, and red onion among the flatbreads and top with chickpeas. Drizzle with hummus dressing, wrap the filling in the pita bread, and serve.
