This hearty, juicy salad is a perfect blend of simple yet delicious ingredients: lush salad greens, blanched green beans, sliced ​​boiled new potatoes, sweet tomatoes, and hard-boiled eggs. A soft goat cheese dressing adds a wonderful flavor. The cheese, sour milk, and a hint of horseradish and mustard in the dressing imbue the salad with a balanced, tart flavor. Ingredients:

  • 220 g green beans, trimmed
  • 1 small red onion, halved
  • 100 g soft goat cheese
  • 1/4 cup sour milk or kefir
  • 2 tablespoons apple cider vinegar
  • 1 tbsp. l. olive oil
  • 1 tbsp horseradish, drain the liquid
  • 2 tsp grainy mustard
  • 0.5 kg small red potatoes, thinly sliced
  • 4 large eggs
  • 8 cups mixed salad greens, torn
  • 1 large ripe tomato, halved and thinly sliced
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Thinly slice half an onion; soak in cold water. Chop 1 tbsp of the remaining onion half and blend together with the goat cheese. yogurt, vinegar, olive oil, horseradish, mustard, 1/4 teaspoon salt, and black pepper to taste until smooth. Add 1 tablespoon of water if necessary.

  • Place the potatoes in a saucepan of salted water, bring to a boil, and cook until tender, about 18 minutes. Drain and pat dry.

  • Meanwhile, place the eggs in another saucepan of salted water; cook for 8-10 minutes, then transfer to a bowl of cold water. Add the green beans to the same saucepan of boiling water; cook until crisp-tender, about 3 minutes. Drain, rinse the beans under cold water, and pat dry. Peel and chop the eggs.
  • Step 4
  • Drain the red onion. Toss in a bowl with the salad greens, green beans, and half the dressing. Top with the potatoes, tomatoes, and egg pieces. Drizzle with the remaining dressing.
