Fried Green Tomato Sandwiches - A Detailed Recipe.


Ingredients:


Sauce
  • 3/4 cup mayonnaise
  • 3 tbsp chopped fresh parsley
  • 3 green onions, cut into rings
  • 2 tsp green hot sauce
  • 1.5 tsp Worcestershire sauce
  • Coarse salt

Sandwiches
  • 6 medium green tomatoes (about 700 g)
  • 1 cup of natural white vinegar
  • 1/4 cup sugar
  • Coarse salt
  • 3 tbsp. seasoning for pickling vegetables (see recipe here)
  • 1 handful of fresh dill (leaves and stems)
  • 2 cups of wheat flour
  • 1/2 cup corn flour
  • 1 tbsp chili powder (See the recipe for the chili pepper spice mix here)
  • 4 large eggs
  • Vegetable oil, for frying
  • 12 slices white bread
  • Yellow and red tomatoes, cut into slices
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare the sauce: In a bowl, combine mayonnaise, parsley, green onions, hot sauce, Worcestershire sauce, and salt to taste. Cover and refrigerate.
  • Step 2
  • Slice green tomatoes into 1/4-inch (6 mm) thick slices and place in a large bowl. Combine vinegar, sugar, and 1 tablespoon of salt in a saucepan. Place the pickling spice in a cheesecloth bag; submerge it in the saucepan along with the dill. Cook over medium heat, stirring, until the sugar dissolves, about 5 minutes. Add 2 cups of cold water and pour into the bowl with the green tomatoes. Let the tomatoes marinate at room temperature for 1 hour 30 minutes.
  • Step 3
  • Combine both types of flour, chili powder, and 1 teaspoon of salt in a bowl. Whisk the eggs, 2 tablespoons of water, and 1 teaspoon of salt. Pour about 2.5 cm of vegetable oil into a large frying pan over medium heat and heat to 190°C.
  • Step 4
  • Remove the green tomatoes from the marinade and pat dry. Dredge the tomatoes in the flour mixture, then dip them in the egg mixture and then dredge them again in the flour mixture. Fry the tomatoes in hot oil, working in batches, for 3-4 minutes on each side, until golden brown. Transfer to paper towels and sprinkle with salt.
  • Step 5
  • Spread each slice of bread with the sauce. Layer fried green tomatoes on 6 slices, then fresh yellow and red tomatoes. Top the sandwiches with the remaining slices of bread.
