This easy-to-make salmon has everything we expect from baked fish: tartness, sweet, salty, and spicy notes, tender, juicy flesh, and most importantly, a crispy crust. This recipe calls for baking the salmon in one large piece. This results in a more succulent fish and a beautiful presentation when served. The savory breadcrumb crust makes it ideal for a holiday or special occasion dinner, and thanks to its quick and easy preparation, it's also perfect for a midweek dinner after work.

Ingredients:

  • 700 g salmon fillet with skin, preferably the center part
  • 2 tablespoons light brown sugar
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/4 cup panko breadcrumbs
  • 0.5 cup chopped parsley leaves
  • 2 tablespoons unsalted butter, melted
  • 1 tbsp Dijon mustard
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 220°C. Line a baking sheet with foil.
  • Step 2
  • In a small bowl, combine brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon coarse salt, and plenty of freshly ground black pepper. In another small bowl, combine panko breadcrumbs with parsley, butter, 1/4 teaspoon coarse salt and a little freshly ground black pepper.
  • Step 3
  • Place the fish skin-side down on the prepared baking sheet and brush the surface with Dijon mustard. Press the brown sugar mixture over the entire surface of the fish, then sprinkle with breadcrumbs. Crimp all four sides of the foil to create a border around the fish to prevent juices from escaping.
  • Step 4
  • Bake until the breadcrumbs are golden brown and the fish is firm, 15 to 18 minutes. Cut into four equal pieces and serve.
