This easy, one-sheet dinner comes together in minutes thanks to the often-overlooked broiler setting. This setting delivers high heat, allowing the broccoli to crisp up perfectly and the salmon to cook quickly. The mayonnaise sauce on the fish acts as a protective barrier, keeping it moist. To make things even easier, buy pre-cut broccoli.

Ingredients:

  • 1 package (340 g) of broccoli florets
  • 2 tablespoons extra-virgin olive oil
  • 2 green onions
  • 1 medium lemon
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 4 salmon fillets, 170g each, skinless (center cut)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to grill mode and position the rack 5 cm from the heating element.
  • Step 2
  • On a large baking sheet lined with foil, toss the broccoli with olive oil and a generous pinch of salt and black pepper. Arrange the broccoli in a single layer. Grill the broccoli while you cook the salmon.
  • Step 3
  • Thinly slice the green onions and finely grate the lemon zest, then combine them in a small bowl with the mayonnaise, Dijon mustard, and a pinch of salt and black pepper. Stir to combine.
  • Step 4
  • Remove the broccoli from the oven. The florets should be slightly charred in places. Use a spatula to toss the broccoli and push it toward the edges of the baking sheet. Sprinkle each fillet with salt and black pepper and place it in the center of the baking sheet. Brush the fish with the mayonnaise mixture.
  • Step 5
  • Grill, rotating the pan halfway through, until the sauce is browned and the salmon is firm and opaque, about 5 minutes. Meanwhile, slice half a lemon into wedges.
  • Step 6
  • Divide the salmon, broccoli and lemon wedges among 4 plates and serve immediately.
