Ingredients:
Red pepper salsa
- 2 red bell peppers
- 1 ripe tomato, cut into quarters
- 1/3 cup pickled picante peppers
- A quarter of a large white onion, coarsely chopped
- 1 tbsp freshly squeezed lime juice
- 0.5 tsp ground cumin
- 1/8–1/4 teaspoon hot sauce
Creamy Garlic Lime Dip
- 1.5 cups sour cream
- 2 tablespoons freshly squeezed lime juice
- 2 tbsp chopped fresh cilantro
- 0.5 tsp ground coriander
- 0.5 tsp lime zest
- 2 small cloves of garlic, finely grated
- Blue corn tortilla chips for serving

Preparation:
- Step 1
- Preheat oven to broil. Place the bell peppers on a large baking sheet and broil, turning, until blackened, about 5 minutes. Transfer to a bowl and cover with plastic wrap. Let cool. Step 2
- While the peppers are cooling, prepare the creamy garlic-lime dip. In a small bowl, combine the sour cream, lime juice, cilantro, coriander, zest, garlic, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth. Stir in 1–2 tablespoons of water to thin to the desired consistency. Step 3
- Peel the peppers, remove the stems, and seeds. Transfer to a food processor or blender. Add the tomatoes, hot pepper, onion, lime juice, cumin, 0.5 teaspoon salt, and 1/4 teaspoon pepper. Blend until smooth. Transfer the sauce to a serving bowl and season with hot sauce, salt, and pepper. Serve with tortilla chips.
