Chocolate hazelnut gelato

Gelato is a type of ice cream originating in Italy. It is made from milk, cream, sugar, and various additives, including fruit, nuts, and chocolate. Gelato has a lower fat content than regular ice cream and contains less air, giving it a richer, denser consistency and a slower melting time. The combination of chocolate and hazelnut is one of the classic flavors of this cold dessert.
Ingredients:
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 cup sugar plus another 1/4 cup
- 4 egg yolks
- 1/2 tsp vanilla extract
- 1/2 cup chocolate-hazelnut spread
- 1/2 cup chopped roasted hazelnuts, for garnish
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
3/4 cup (st.) - 180 ml.

1/3 cup (st.) - 80 ml.

Preparation:
- Step 1
- In a saucepan, combine milk, cream, and 1/2 cup sugar. Cook over medium heat until the sugar dissolves, about 5 minutes. Step 2
- Meanwhile, in a medium bowl, beat the egg yolks with the remaining sugar with a mixer for about 4 minutes until the yolks thicken and turn pale yellow. Pour 1/2 cup of warm milk and the cream mixture into the egg mixture and stir. Return everything to the saucepan. Cook over very low heat, stirring constantly, for about 7-10 minutes until the mixture thickens enough to not run off the back of a wooden spoon. Step 3
- Place a sieve over a medium bowl and strain the warm mixture through it. Stir in the vanilla extract and nut butter until smooth. Cool the mixture completely before transferring it to an ice cream maker, and freeze according to the manufacturer's instructions. To serve, scoop the gelato into serving bowls, using a scoop to form balls, and sprinkle with hazelnuts.
