Low-carb cauliflower and cheese breadsticks

Turn a small head of cauliflower into golden, cheesy breadsticks that you can eat as much as you want, even if you're on a low-carb or gluten-free diet. Puree the cauliflower in a food processor and mix with eggs and grated cheese (a mixture of Parmesan and Cheddar). Form the resulting "dough" into a rectangular shape, bake it in the oven until golden brown, and then cut into sticks. Serve with a dipping sauce. A great light appetizer to offer to guests while you wait for the main course.

Ingredients:

  • 1 small head cauliflower, cut into florets (about 4 cups)
  • 1 small clove of garlic
  • 0.5 tsp dry Italian seasoning
  • 1/4 teaspoon red pepper flakes, optional
  • 2 large eggs, beaten
  • 2 cups grated cheddar (about 220 g)
  • 1 cup grated Parmesan (about 150 g)
  • Marinara sauce, for dipping
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 450°F (245°C), line a rimmed baking sheet with parchment paper and spray with cooking spray.
  • Step 2
  • Place the cauliflower and garlic in a food processor and process until finely chopped, similar to couscous. Transfer to a large bowl. Add the Italian seasoning, red pepper flakes, if using, eggs, 1 cup of cheddar, 1/2 cup of Parmesan, 1/2 teaspoon of salt, and a few grinds of freshly ground black pepper. Process until the mixture comes together when pressed.
  • Step 3
  • On the prepared baking sheet, form the mixture into a 20x30 cm rectangle, about 0.5 cm thick. Use the straight edge of the parchment paper to help you form straight edges around the cauliflower rectangle. Bake until golden brown all over, 18-20 minutes.
  • Step 4
  • Remove the baking sheet from the oven and place another sheet of parchment on it. Place the second baking sheet upside down on the parchment. Using oven mitts, hold the two baking sheets together and invert them so that the cake is on the parchment on the inverted baking sheet. Remove the first parchment from the cake, cut the cake into 4-cm-thick strips (you should have 8-9 sticks), and push them apart slightly. Sprinkle with the remaining 1 cup cheddar and 1/2 cup Parmesan. Bake on the inverted baking sheet until the cheese is melted and golden brown in spots, 8-10 minutes.
  • Step 5
  • Let cool for 5 minutes, then transfer the parchment-lined sticks to a serving platter and serve with marinara sauce for dipping.
