Peanut Oatmeal Crackers - A Detailed Recipe.


Ingredients:

  • 1/2 cup sifted grade 1 flour, with extra for dusting
  • 1/4 cup whole grain flour
  • 3 tbsp. rolled oats
  • 1 tbsp. l. brown sugar
  • 1/2 tsp fine salt
  • 3 tablespoons cold unsalted butter, cut into cubes
  • 2 tbsp finely chopped salted roasted peanuts
  • 1/4 cup peanut butter
  • 2 tbsp. milk
  • 3 tbsp. granulated sugar
  • 1/2 cup dry red wine
  • 1 small sprig of thyme
  • 15 large Kishmish grapes, halved
  • A pinch of salt
  • 150 g of Brie, Camembert or any soft cheese, at room temperature
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place all-purpose flour, whole-wheat flour, oats, brown sugar, and salt in a food processor. Add the butter and pulse until the mixture resembles wet sand. Add the peanuts, peanut butter, and milk and pulse until smooth.

    Place the dough on a lightly floured surface and knead 4-5 times.
    Shape the dough into a ball. Roll the dough into a 30 cm long log with a diameter of approximately 2.5 cm. Wrap in plastic and refrigerate for 2 hours, until firm.
  • Step 2
  • Preheat the oven to 190°C and line two baking sheets with parchment paper. Cut the dough into slices and roll them into rounds about 1 cm thick. Place them on the baking sheets, spacing them 2.5 cm apart. Bake until golden brown, 10-12 minutes. Remove from the oven and let the oatmeal crackers cool.
  • Step 3
  • Meanwhile, prepare the glazed grapes: Combine granulated sugar, wine, and thyme in a small saucepan and cook over medium heat until thickened, 10 to 12 minutes. Remove the thyme and add the grapes and coarse salt; stir and cook for another minute. Remove from heat and cool.
  • Step 4
  • Before serving, spread the crackers with Brie cheese and top with glazed grapes. Season the crackers with ground pepper, if desired.
