"I was born and raised in Ghana, and we always celebrated all important occasions with a big feast," recalls recipe author Gabi Odebode. "Family and friends would gather around the table, where special dishes like jollof rice, waakye, and shito, rice with stewed meat and plantains, were laid out. To balance the rich, savory flavors of these dishes, salads were always served as a side dish, and only those truly skilled in preparing them were entrusted with the task. There are two versions of Ghanaian salad, and both are very simple to prepare. The vegetarian version typically includes lettuce, tomatoes, carrots, cucumber, onions, and baked beans. The non-vegetarian version includes canned corned beef or sardines. This recipe is a traditional vegetarian version, but I added one unusual ingredient: avocado." No matter which version of Ghanaian salad you make, the dressing is always the same—creamy mayonnaise. At home, we usually used store-bought Heinz creamy dressing."
