Without rum, a mojito remains a delicious and refreshing drink, a delightful combination of sweetness, tartness, and a hint of herbaceousness. Agave syrup adds a touch of viscosity and a richer flavor to the non-alcoholic cocktail, which might be lacking without rum.

Ingredients:

  • 1/2 cup loosely packed fresh mint leaves + 2 sprigs for serving
  • 3 limes, 1 cut into quarters, juice 2 (about 1/4 cup)
  • 90 ml non-alcoholic rum, such as Lyre's White Cane Spirit
  • 2 tablespoons light agave syrup
  • 2 cups ice or lime ice cubes
  • 0.5 cup seltzer water or soda
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place mint leaves and lime quarters in a cocktail shaker and muddle with a muddler or the handle of a wooden spoon until the mint releases its oils, about 20 seconds. Add lime juice, non-alcoholic rum, if using, agave, and ice and shake vigorously until the shaker begins to frost over, about 30 seconds.
  • Step 2
  • Pour the contents into two rocks or highball glasses. Top with seltzer water and serve garnished with a fresh mint sprig.

    Lime ice:

    If you have limes or lemons that are about to spoil (or you just have a lot of them), juice them and freeze them in ice cube trays. A standard ice cube tray contains about 2 tablespoons (30 ml) of juice, making it easy to measure out into cocktails. This is a great way to prepare ahead and preserve precious juice.
