Shrimp Escabeche


How to Make Shrimp Escabeche

Escabeche is a pre-marinated seafood dish. Small fish or seafood is first fried while the spices for the marinade are prepared. The seafood is then covered in a spicy vinegar-based marinade and left to cool for a long time.


Ingredients:

  • 700 g peeled and gutted medium-sized shrimp (21 - 25 pcs. per 450 g)
  • 1/3 tbsp. olive oil plus 2 tbsp. l.
  • Salt and ground black pepper
  • 1 large red onion, peeled and thinly sliced ​​into half rings
  • 4 cloves of garlic, thinly sliced
  • 2 thinly sliced ​​serrano chili peppers
  • 1 teaspoon cumin seeds
  • 1 tsp. mustard seeds
  • 2 cups white wine vinegar
  • 2 bay leaves
  • 8 sprigs of cilantro
  • 1/2 cup thinly sliced ​​radish
  • 3 tbsp. torn coriander leaves
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat the grill to high. In a bowl, toss the shrimp with 2 tablespoons olive oil and 1/2 teaspoon each of salt and pepper.

    Grill the shrimp for 1-2 minutes per side or until cooked through. Transfer the shrimp to a clean medium bowl.
  • Step 2
  • In a medium saucepan, heat 1/3 cup olive oil over medium heat. Once hot, add the onion, garlic, and serrano chili pepper and sauté until soft.

    Add the cumin and mustard seeds and cook for one minute. Pour in the vinegar, add the bay leaves and cilantro, and bring the mixture to a boil. Remove from heat, immediately pour over the shrimp, and stir.

  • Let cool to room temperature, cover, and refrigerate for at least 8 hours or overnight, stirring occasionally. Transfer the escabeche to a serving platter with a slotted spoon and garnish with sliced ​​radishes and cilantro leaves.
