While strawberries are a rather exotic treat for a winter holiday, at Christmas or New Year's, you really want to treat yourself and your loved ones to the most delicious and interesting desserts! Especially since with a little imagination, strawberries can easily be transformed into tiny Santa Clauses or Father Frosts, which will look stunning on your holiday table. And the flavor combination of fresh strawberries and cream cheese frosting is simply amazing. Arrange these strawberry Santa Clauses on a platter and serve with champagne or use them to decorate cakes.

Ingredients:


Cream
  • 1/4 cup mascarpone cheese, room temperature
  • 1/4 tsp natural vanilla extract
  • 1 cup powdered sugar

Santa Clauses
  • 12 large strawberries
  • 24 mini chocolate chips
  • Special equipment: pastry bag with a small star-shaped tip
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • For the cream: In a medium bowl, beat the mascarpone cheese and vanilla with a hand mixer until smooth. Gradually add the powdered sugar until the cream is thick and smooth. Using a spatula, transfer the cream to a pastry bag fitted with a small star tip.
  • Step 2
  • For Santa Clauses: Using a small knife, trim the wide end of each strawberry to create a flat surface. Trim off 1-2 cm of the pointed tops and set aside. These will become the caps.
  • Step 3
  • Place the strawberries flat on the work surface. Pipe 2 cm of frosting onto each strawberry. Place the piping caps on top and pipe a ball of frosting onto the tip of each cap. Press 2 chocolate chips, pointed ends inward, into the frosting to create eyes.
