Whole durum wheat is the healthiest and most popular among those who follow a healthy diet. Although it takes longer to cook than other grains, the results are worth it. Its incredible texture, beneficial properties, and exquisite flavor are enhanced by additional ingredients, including walnuts, juicy celery, dried cherries, and fresh herbs.

Ingredients:

  • 1.5 cups durum wheat grains
  • 3/4 cup chopped walnuts
  • 2 stalks celery, finely chopped
  • 0.5 cups sour dried cherries, chopped
  • 1 green onion, chopped
  • 0.5 cup finely chopped parsley leaves
  • 3 tbsp. l. olive oil
  • 2 tablespoons lemon juice
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the wheat grains in a large saucepan and add water to a level 5 cm above. Bring to a boil and simmer, uncovered, for 1 hour or until tender. Drain and cool the wheat. Toast the walnuts in a dry, medium skillet over medium-high heat until fragrant, 2-3 minutes.
  • Step 2
  • In a large bowl, combine the wheat, walnuts, celery, dried cherries, onion, parsley, and lemon juice; season with salt and pepper. Serve with beef.
