We recommend

Preparation:

    Step 1
  • Preheat oven to 200°C.
  • Step 2
  • Meat sauce:

In a large ovenproof skillet, heat the olive oil over medium-high heat until shimmering. Add the sausage and cook, breaking up the pieces with a wooden spoon, until golden brown, 2 to 3 minutes.
  • Step 3
  • Stir in the marinara sauce, scraping up any browned bits from the bottom of the pan. Add the red pepper flakes, if using, and season with salt and ground black pepper. Bring to a boil, reduce the heat to medium, and simmer, uncovered, stirring frequently, until the sauce thickens, 8-10 minutes. Remove from the heat and set aside.
  • Step 4
  • Ricotta mixture:

Grate half the mozzarella into a medium bowl. Add the ricotta, Parmesan, and 1 clove of garlic. Set aside.
  • Step 5
  • Collect the dip:

Cut the remaining mozzarella into thirds, then cut each third into 6 rectangular pieces, for a total of 18 pieces of cheese. Divide the dough into 18 smaller pieces. Wrap each piece of dough around one of the mozzarella rectangles to seal the cheese inside the dough.
  • Step 6
  • Place the mozzarella balls, seam-side down, along the sides of the pan, over the sauce. Spread the meat sauce around them, filling the spaces between the balls.
  • Step 7
  • Spoon the ricotta mixture over the meat sauce in the center of the pan (it will spread slightly during baking). Arrange the pepperoni slices on top of the ricotta mixture.
  • Step 8
  • In a small bowl, combine the butter with the remaining 2 garlic cloves and brush over the dough. Bake until the dough is golden brown and the ricotta mixture is melted and bubbly, 35-40 minutes. Let rest for 15 minutes and serve.
