Want to cook shrimp in a delicious and unusual way? Poach them in orange wine! The wine itself is also homemade: store-bought white wine is infused with orange zest and natural vanilla, along with vodka and sugar. This can be done in advance, and the wine will keep for several months. Simply poach the shrimp until tender in orange wine with thyme and red pepper and serve as an appetizer. The remaining liquid in the pan is evaporated, turning into a delicious seafood sauce.

Ingredients:


Orange wine
  • 4 oranges
  • Half a vanilla pod
  • 1 box (3 liters, about 12.5 cups) white wine
  • 3 tbsp. vodka
  • 3 tbsp. sugar

Shrimps
  • 1/4 cup extra-virgin olive oil
  • 2-3 sprigs of fresh thyme
  • A pinch of red pepper flakes
  • 450 g large shrimp in shells
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Orange wine:

    Using a paring knife, peel the orange zest into wide strips and place in a large, sterilized container with a lid. Juice the oranges into the container. Split the vanilla bean lengthwise and scrape out the seeds into the same container, then add the bean. Add the wine, vodka, and sugar.
  • Step 2
  • You can use the shrimp cooking wine immediately, or better yet, cover and store in a cool, dark place for 2-4 weeks, stirring once a week. The wine can be stored for up to 2 months.
  • Step 3
  • Cocktail shrimp:

    In a large skillet, combine 1.5 cups orange wine with olive oil, thyme, red pepper flakes, a generous pinch of salt, and 0.5 cups water. Bring to a boil over medium heat, then add the shrimp, cover, and cook for 2-3 minutes. Turn the shrimp, cover, and cook until pink, another 2-3 minutes.
  • Step 4
  • Transfer the shrimp to a serving platter. Reduce the liquid in the pan for 10 minutes, then drizzle it over the shrimp. Serve the remaining sauce from the pan in a separate bowl for dipping.
