Once you've tried homemade eggnog made with custard eggs, you'll never want to drink store-bought eggnog again. This is our perfect, safe recipe for a Christmas drink. It's so festive and delicious, with hints of nutmeg and vanilla. We made the eggnog fluffier by adding whipped cream. And no alcohol is necessary, making it enjoyable for both adults and children.

Ingredients:

  • 2 large eggs + 1 egg yolk
  • 0.5 cups of sugar
  • 2.5 cups of milk
  • 1 cup heavy cream 33%
  • 0.5 tsp vanilla extract
  • 1/4 tsp freshly grated nutmeg, plus extra for sprinkling
  • 0.5 cup chilled rum or brandy, optional
  • Cinnamon sticks for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Whisk the eggs, egg yolk, and sugar in a large heatproof bowl until smooth.
  • Step 2
  • In a medium saucepan, heat the milk and 1/2 cup heavy cream over medium heat until steaming, but do not bring to a boil. Remove from heat. Whisk 1 cup of the hot milk mixture into the egg mixture, then pour everything into the saucepan and stir. Cook over medium heat, stirring constantly with a wooden spoon, until the mixture is thick enough to coat the back of the spoon and a thermometer registers 165°F (74°C), about 5 minutes. Do not bring to a boil, otherwise the eggs will curdle..
  • Step 3
  • Strain the drink through a fine sieve into a large bowl and add vanilla and nutmeg. Let cool at room temperature for about 1 hour. Cover and refrigerate for at least 2 hours or up to 1 week..
  • Step 4
  • In a large bowl, whip the remaining 1/2 cup heavy cream until stiff peaks form. Gradually fold the whipped cream into the chilled eggnog mixture, then add the rum. Pour the cocktail into glasses, sprinkle with nutmeg, and serve with cinnamon sticks.
