Ingredients:

  • Six bottles (330 ml each) of chilled dark beer, such as Negra Modelo
  • 1 cup of sugar
  • 3/4 teaspoon black peppercorns
  • 12 allspice berries
  • One piece (15 cm) ginger, thinly sliced ​​(about 1 1/2 cups)
  • 6 tablespoons freshly squeezed lime juice
  • Ice
  • 6 tablespoons dark rum
  • Lime wedges for garnish
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

  • In a small saucepan, combine 2 cups of water with the sugar, black pepper, allspice, and ginger. Bring to a boil, stirring constantly. Simmer until the mixture has reduced slightly, about 25 minutes. Remove from heat, cool, and then strain. You'll have about 1 1/4 cups of syrup.

  • Mix ginger syrup and lime juice. Fill large beer glasses halfway with ice and add 2 to 4 tablespoons of ginger syrup, to taste. Pour a bottle of beer into each glass, then slowly pour in a tablespoon of dark rum, allowing it to float on the surface. Garnish each cocktail with a lime wedge.
