Hot crab dip with ranch sauce

Hot crab dip is one of the most popular appetizers for house parties in the West. It's made with real crab meat baked in a rich ranch sauce with herbs and topped with a melting Parmesan crust. Serve the dip piping hot, straight from the oven, in a casserole. Arrange crackers and toast around it for dipping and enjoying.

Ingredients:
- 110 g of cream cheese, room temperature
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup sour milk or kefir
- 1 tbsp flour
- 2 tsp Worcestershire sauce
- 1 teaspoon hot sauce
- 1/4 tsp. grated lemon zest
- 1 clove garlic, finely grated
- 1/4 cup grated Parmesan cheese, plus extra for sprinkling
- 3 green onions, thinly sliced
- 2 tbsp chopped fresh chives, plus extra for sprinkling
- 450 g lump crab meat, sorted
- Paprika, for sprinkling
- Toast or crackers, for dipping

- Step 1
- Preheat oven to 190°C. Step 2
- In a large bowl, combine the cream cheese, mayonnaise, sour cream, buttermilk, and flour. Add the Worcestershire sauce, hot sauce, lemon zest, garlic, Parmesan, and 1 teaspoon salt; beat with a mixer on medium speed until smooth and creamy, about 2 minutes. Step 3
- Add green onions, chives and crab meat and continue to pulse until fully incorporated. Step 4
- Transfer the mixture to a shallow 1-quart baking dish, sprinkle with additional Parmesan and bake until golden brown, 15 to 30 minutes. Step 5
- Sprinkle the dip with paprika and chives. Serve with toast or crackers.
