Cook juicy and tender pieces of pork in a flavorful sauce made from pureed chipotle peppers, honey, and vinegar, and let your family make their own tacos filled with pulled pork and other classic fillings.

Ingredients:

  • 1.8 kg of chopped pork shoulder (unpeeled)
  • 3 whole ancho chili peppers
  • 3 whole pasilla chili peppers
  • 2-3 chipotle peppers in adobo sauce
  • 1/2 medium white onion, coarsely chopped
  • 4 unpeeled cloves of garlic
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons of honey
  • Coarse salt
  • 1 tbsp. apple cider vinegar
  • 2 tsp dried oregano
  • 2 bay leaves
  • 1 cinnamon stick
  • 3 and 3/4 cups low-sodium chicken broth
  • Freshly ground pepper
  • Heated corn tortillas tortillas, for serving
  • Assorted taco fillings, as a side dish
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the ancho pepper, pasilla, and garlic in a bowl with 2-3 tablespoons of water. Microwave on high until the peppers are soft and pliable, 2-3 minutes. Remove the stems and seeds from the peppers and peel the garlic. Transfer the peppers and garlic to a blender.
  • Step 2
  • In a blender, add the chipotle pepper, onion, 2 tablespoons olive oil, honey, vinegar, 1 tablespoon salt, and oregano; puree until smooth. In a large skillet over high heat, heat the remaining 1 tablespoon oil. Add the chili sauce and cook, stirring, until thickened and fragrant, about 8 minutes. Pour in the broth and reduce until slightly thickened.
  • Step 3
  • Season the pork with salt and pepper and place in a large slow cooker. Add the bay leaves and cinnamon stick, then pour in the sauce. Close the lid and cook at maximum heat until the meat is tender, about 5 hours. (Or, cook the meat in a large roasting pan in the oven, covered, for 1 hour 45 minutes at 350°F (180°C). Uncover and bake for an additional 30 minutes.)

    Discard the bay leaves and cinnamon stick. Shred the pork with two forks and season with salt and pepper. Serve the pork pieces on a plate. tortillas with fillings.
