Jerk Chicken Thighs with Spicy Mango Dip - A Step-by-Step Recipe.


Ingredients:

  • 8 chicken thighs
  • Sliced ​​fresh mango fruit
  • Homemade Mango Habanero Sauce (see recipe below)
  • Coriander leaves for garnish

Jerk Spice Mix:
  • 2 tbsp. ground coriander
  • 2 tablespoons ground ginger
  • 2 tbsp. l. brown sugar
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp coarse salt
  • 1 tbsp. cayenne pepper
  • 2 tsp crushed black pepper
  • 2 tsp dried thyme
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon ground cloves

Homemade Mango Habanero Sauce:
  • 1 tbsp. l. canola oil
  • 1 small Spanish onion, finely chopped
  • 2 finely chopped cloves of garlic
  • 2 ripe mangoes, peeled and roughly chopped (pit removed)
  • 1 chopped habanero pepper
  • 1 cup white wine vinegar
  • Salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Grilled Chicken with Jerk Spice Mix: Combine all the spices in a small bowl. Rub the mixture into the chicken skin and let sit for 30 minutes.

    Preheat the grill to medium and grill the chicken thighs, skin-side down, for 12-15 minutes, until golden brown. Flip the chicken, close the grill lid, and move the chicken to the side (or to the coolest part). Continue cooking for 6-7 minutes, or until cooked through. Transfer the chicken to a plate and let rest for 5 minutes before serving.

    Serve with fresh mango slices and mango-habanero sauce. Garnish with cilantro leaves.

  • Homemade Mango Habanero Sauce: Heat oil in a medium saucepan over medium heat. Add the onion, garlic, mango, habanero pepper, and vinegar and cook over low heat for 15-20 minutes. Place the mixture in a blender and blend until smooth. If the mixture is too thick, add a few tablespoons of warm water or vinegar. Season with salt. Serves 4.
