Calico beans (also known as cowboy beans) get their name from the variety of colors found in the different varieties. Here, we use three types of canned beans: white beans, dark red kidney beans, and light brown baked beans with pork. All the beans are combined and baked with bacon and ground beef in a sweet and spicy sauce, creating the perfect summer side dish for grilled meats. Calico beans are also great on their own as a main dish, topped with grated cheese and drizzled with hot sauce.

Ingredients:

  • 6 strips bacon (about 170g), cut crosswise into 0.5cm wide pieces.
  • 1 medium yellow onion, diced
  • 450 g of ground beef with 20% fat content
  • 1 can (425 g) kidney beans, rinsed
  • 1 can (425 g) canned white beans, rinsed
  • 1 can (300 g) of canned pork with beans
  • 0.5 cups ketchup
  • 1/4 cup firmly packed light brown sugar
  • 1 tbsp dry mustard
  • 1 tbsp. apple cider vinegar
  • 0.5 tsp coarse salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Position a rack in the middle of the oven and preheat the oven to 160°C.
  • Step 2
  • Place the bacon in a large skillet and cook over medium heat, stirring occasionally, until crisp, 8–10 minutes. Using a slotted spoon, remove the bacon to a paper towel-lined plate.
  • Step 3
  • Drain most of the rendered fat from the skillet, reserving 1 tablespoon. Add the onion and ground beef and cook, breaking up the ground beef, until the onion is softened and the beef is crumbly and cooked through, about 5 minutes. Drain any excess liquid that has released from the meat, if necessary.
  • Step 4
  • Add the bacon, all the beans, pork and beans, ketchup, brown sugar, dry mustard, vinegar, and salt. Stir and then transfer to a 9x13 inch baking dish.
  • Step 5
  • Bake until bubbly and crispy on top, 35–40 minutes.
