Try this unique avocado toast with egg and vegetables. Avocado halves are topped with crispy breadcrumbs fried in garlic butter, topped with a fried egg, and garnished with thinly sliced ​​radishes, green onions, and a drizzle of hot sauce. Ingredients:

  • 4 large eggs

1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Grind the bread in a blender until very fine crumbs are formed (you should get about 1.5 cups).
  • Step 2
  • In a large nonstick skillet, heat the garlic and 3 tablespoons olive oil over medium-high heat until the garlic is toasted and fragrant, 3-4 minutes. Discard the garlic. Add the bread crumbs and cook, stirring frequently, until golden, 5-7 minutes. Transfer to a paper towel-lined plate and season with salt.
  • Step 3
  • Wipe the skillet with a clean paper towel, add the remaining 1 tablespoon olive oil, and heat over high heat. Crack in the eggs and cook until the outer edges are crisp and bubbly but the yolks are still slightly raw, 1 to 2 minutes. Remove from the heat and let the yolks cook in the skillet until they are set, 1 to 2 minutes.

  • Generously brush the cut sides of the avocado halves with lemon juice and season generously with salt. Working with one half at a time, coat the avocado in the breadcrumbs, turning and gently pressing to coat the entire surface and cavity. Set aside the remaining breadcrumbs.

  • To serve, place 1 avocado half on a small plate. Sprinkle with a little breadcrumbs and top with an egg, green onions, radishes, and hot sauce.
