Ingredients:
- 2 slices of white bread, torn into pieces
- 2 cloves garlic, peeled and crushed
- 4 tbsp. l. olive oil
- 2 ripe avocados, peeled, pitted and cut in half lengthwise
- 3 tablespoons freshly squeezed lemon juice
- 4 large eggs
- 2 radishes, thinly sliced
- 1 green onion, thinly sliced
- Hot sauce and lemon wedges for serving

Preparation:
- Step 1
- Grind the bread in a blender until very fine crumbs are formed (you should get about 1.5 cups). Step 2
- In a large nonstick skillet, heat the garlic and 3 tablespoons olive oil over medium-high heat until the garlic is toasted and fragrant, 3-4 minutes. Discard the garlic. Add the bread crumbs and cook, stirring frequently, until golden, 5-7 minutes. Transfer to a paper towel-lined plate and season with salt. Step 3
- Wipe the skillet with a clean paper towel, add the remaining 1 tablespoon olive oil, and heat over high heat. Crack in the eggs and cook until the outer edges are crisp and bubbly but the yolks are still slightly raw, 1 to 2 minutes. Remove from the heat and let the yolks cook in the skillet until they are set, 1 to 2 minutes. Step 4
- Generously brush the cut sides of the avocado halves with lemon juice and season generously with salt. Working with one half at a time, coat the avocado in the breadcrumbs, turning and gently pressing to coat the entire surface and cavity. Set aside the remaining breadcrumbs. Step 5
- To serve, place 1 avocado half on a small plate. Sprinkle with a little breadcrumbs and top with an egg, green onions, radishes, and hot sauce.
