Brie cheese dip with honey and pepper

This four-ingredient dipping sauce will delight everyone with its combination of sweet, salty, and savory peppery notes. It's great on its own with dipping appetizers or as part of a cheese platter. The base of the dip is brie cheese, soft and creamy. The texture of the dip itself is similar. Before cooking, carefully remove all the rind from the brie, as it can impart bitterness. To make removing the rind easier, briefly place the cheese in the freezer. When whisking the sauce in a mixer, remember to stop frequently to scrape down the sides of the bowl and incorporate it completely. This will ensure a super-smooth dip.


Ingredients:

  • 1 circle of brie cheese weighing 200-220 g.
  • 2 tablespoons of honey
  • 1 cup heavy cream
  • Crushed pink, black and white peppercorns
  • Apple chips, celery stalks, slices of bread with nuts and dried fruit or pumpernickel, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Remove all the rind from the brie cheese using a small, sharp knife and your fingers. The rind can impart a bitter taste, so it's best to remove it thoroughly. Beat the cheese on high speed in the bowl of a stand mixer fitted with the paddle attachment until smooth, scraping down the sides of the bowl as needed (the cheese will be thick and sticky at this point).
  • Step 2
  • Stir in the honey and 3/4 teaspoon of salt, stopping the mixer to scrape down the sides of the bowl. Continuing to beat on high speed, gradually drizzle in the cream and beat until the mixture is light and smooth, stopping the mixer as needed to scrape down the sides. The sauce can be refrigerated for up to 2 hours.
  • Step 3
  • Transfer the sauce to a small serving bowl, sprinkle with cracked pepper and serve with apple chips, celery sticks, pumpernickel slices, or nut and fruit bread.
