Football Cookies with Walnuts

These nutty football-shaped cookies with orange icing lacing are a perfect treat while watching the game. Made with walnuts, their rich flavor is perfectly complemented by spicy notes of cinnamon and allspice.

Ingredients:

  • 2 1/4 cups all-purpose flour, plus extra for dusting
  • 1 cup ground walnuts
  • 1 teaspoon ground cinnamon
  • 0.5 tsp ground allspice
  • 1/4 teaspoon coarse salt
  • 220 g unsalted butter at room temperature
  • 0.5 cup light brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup powdered sugar
  • 1 tbsp. l. + 2 tsp. orange liqueur, such as Grand Marnier
  • 0.5 tsp orange zest (from half an orange)
  • Special equipment: An oval football-shaped cookie cutter and a pastry bag with a narrow round tip.
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium bowl, combine flour, walnuts, cinnamon, allspice, and salt. Set aside.
  • Step 2
  • Using a hand mixer, beat the butter and brown sugar in a large bowl on medium-high speed, scraping down the sides of the bowl as needed, until light and fluffy, about 3 minutes. Add the vanilla extract and egg and beat for another minute.
  • Step 3
  • Reduce mixer speed to low and add flour in three additions, mixing until smooth. Place the dough on a large piece of plastic wrap and shape it into a round disk. Refrigerate the dough for at least 2 hours and up to overnight.
  • Step 4
  • Preheat oven to 175°C. Line a rimmed baking sheet with parchment paper.
  • Step 5
  • Flour the baking sheet and dough and roll the chilled dough out to a thickness of 0.5 cm. Cut out ovals from the dough and place them on the prepared baking sheet, spacing them about 2.5 cm apart. Bake until the cookies are set and starting to brown lightly around the edges, about 20 minutes. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  • Step 6
  • Meanwhile, in a medium bowl, combine the powdered sugar, orange liqueur, and orange zest. Spoon the mixture into a pastry bag fitted with a narrow round tip. Once the cookies have cooled completely, pipe the laces onto the soccer balls. Let them set completely before serving. Store the cookies in a tightly sealed container.
