A delicious and warming eggnog is just the thing to get you into the holiday spirit during the coldest time of year. In many Western countries, Christmas and New Year's are associated with this drink. Unlike the classic version, this recipe doesn't contain milk or cream. But the spiced apple juice and eggnog combine to create a drink that evokes both the flavors of autumn and the winter holidays.


Ingredients:


Warmed apple juice with spices
  • 20 black peppercorns
  • 10 star anise
  • 10 allspice
  • 10 cinnamon sticks
  • 10 cloves
  • 10 cardamom fruits
  • 2 liters of unfiltered apple juice without added sugar
  • 2 tbsp. fresh carrot juice
  • 1/2 cup fresh ginger juice
  • 1/2 cup unrefined demerara cane sugar
  • Zest from 1 orange
  • 1/4 teaspoon freshly grated nutmeg
  • A pinch of salt

Eggnog mix
  • 3 large eggs
  • 1/2 tsp. nutmeg
  • 1/4 tsp ground cinnamon
  • 15 ml aged rum
  • A pinch of salt
  • 1/4 cup and another 1/8 cup of granulated sugar

Festive Eggnog
  • 350 ml aged rum
  • 180 ml aged brandy
  • Freshly grated nutmeg, for garnish
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • For the warmed spiced apple juice: Combine black peppercorns, star anise, allspice, cinnamon, cloves, and cardamom in a large saucepan over medium heat. Toast the spices until fragrant, 3–5 minutes. Pour in the apple, carrot, and ginger juices, add the sugar, orange zest, nutmeg, and salt. Reduce the heat to low and let the mixture simmer, uncovered, until the juices are fragrant and the spices are well infused, 1–2 hours. Strain the liquid through a fine sieve or cheesecloth to remove any sediment. The spiced juice can be prepared in advance and reheated before serving.
  • Step 2
  • Eggnog mix: Separate the yolks from the whites. Place them separately in 2 medium bowls. Whisk the yolks with nutmeg, cinnamon, rum, and salt. Gradually add 1/4 cup sugar. Mix until the texture is silky and the sugar is completely dissolved. Set aside.
  • Step 3
  • Beat the egg whites at medium speed, gradually adding 1/8 cup sugar until stiff peaks form.
  • Step 4
  • Gently fold the egg whites into the yolk mixture. This mixture will keep for about one evening. Make sure the eggs are fresh, as they will be served raw.
  • Step 5
  • Before serving the festive eggnog: For each serving, combine in a heatproof glass or mug: 120 ml hot spiced apple juice, 60 ml eggnog mix, 30 ml rum, and 15 ml brandy. Garnish with grated nutmeg.
