Frozen Strawberry Michelada (Slush)

How to Make - Frozen Strawberry Michelada (Slushie)
Kitchen:Mexican,
Time: 15 minutes plus freezing time
Complexity: easily
Servings: 4

This slushy was inspired by the traditional Mexican drink, the michelada, which consists of beer, which Mexicans like to flavor with lime juice and a dash of hot sauce. Instead of hot sauce, this beer cocktail uses frozen jalapeño peppers, while strawberries, strawberry liqueur, and frozen lemonade concentrate infuse it with a fruity freshness that complements the spicy notes of the peppers. Blend the cocktail with plenty of ice to create a slushy consistency. Serve in glasses adorned with spicy rims. This cocktail is a wonderful pick-me-up and a great hangover cure.

Recipe:

Freeze 2 cups quartered strawberries and 1 pickled jalapeño for 2 hours. Combine 1/4 cup coarse salt, 1/4 teaspoon cayenne pepper, and the zest of 1 lime. Rub the rims of 4 beer mugs with a lime wedge, dip them in the salt mixture, and chill them in the freezer. In a blender, combine the frozen strawberries and jalapeños with 2 x 12-ounce bottles of beer, 1 cup frozen lemonade concentrate, 2 oz. strawberry liqueur, and 1 cup ice and blend until snow-white. Divide among glasses; garnish with strawberries and pickled jalapeño.
