Salmon steak with pineapple and guacamole sauce

Ingredients:
Salmon
- 4 salmon fillet skinless (110 g), about 2.5 cm thick each
- 4 round slices (rings) of pineapple, 1.3 cm thick, preferably fresh
- 2 tbsp. l. olive oil
- 1.5 tsp chopped basil, plus a few sprigs for garnish
- 1.5 tsp chopped chives
- 1 teaspoon chopped tarragon, plus a few sprigs for garnish
- 1/2 tsp salt
- 1/2 tsp ground black pepper
Guacamole with anchovies
- 1/2 avocado, diced
- 1/4 cup lemon juice (from about 1 large lemon)
- 2 tbsp chopped basil
- 1 tbsp finely chopped chives
- 1 tbsp. l. olive oil
- 1.5 tsp finely chopped tarragon
- 1/8 tsp anchovy paste, optional
- 1/8 tsp salt
- 1/8 tsp ground black pepper
- 1 small clove of pressed garlic

Preparation:
- Step 1
- Place a grill pan over medium-high heat, or preheat a gas or charcoal grill. Step 2
- Combine the oil, chopped basil, chives, chopped tarragon, salt, and pepper in a small bowl. Brush the salmon fillets and pineapple slices with the herb mixture. Step 3
- Grill the fillet for about 4 minutes per side until it's almost cooked through but still pink inside. Grill the pineapple until lightly charred, about 3-4 minutes per side. Step 4
- Place 1 slice of pineapple on a separate plate and place a piece of salmon on top, slightly overlapping the pineapple. Step 5
- Drizzle each piece of fish with 2 tablespoons of avocado sauce. Garnish with basil and tarragon sprigs and serve.

Combine lemon juice, basil, onion, olive oil, tarragon, anchovy paste (if using), salt, pepper, garlic, and avocado in a food processor. Add 2 tablespoons of water and process until smooth. Cover the sauce and let it sit for 15 minutes to 1 hour to allow the flavors to meld.
