Eggnog isn't typically considered a low-fat drink, but this version replaces whole milk and heavy cream with skim milk and cornstarch as a thickening agent. Citrus zest and a vanilla bean ensure your low-fat version is packed with flavor.

Ingredients:

  • 2 cups of skim milk
  • 2 wide strips of orange or lemon zest
  • 1 vanilla pod
  • 2 large eggs
  • 1 egg yolk
  • 1/3 cup sugar
  • 1 teaspoon cornstarch
  • Light rum or bourbon (optional for the alcoholic version of the cocktail)
  • Freshly grated nutmeg, for sprinkling
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Pour 1.5 cups of milk into a saucepan and add the zest. Cut the vanilla bean in half, scrape out the seeds, and add them to the saucepan along with the bean. Place the saucepan on the stove and bring to a simmer over medium heat. Meanwhile, whisk the eggs, egg yolk, sugar, and cornstarch in a bowl.
  • Step 2
  • Then, whisking constantly, slowly pour the hot milk mixture into the egg mixture and return it to the saucepan. Return the saucepan to the stovetop and heat, stirring constantly, until the mixture begins to thicken, about 8 minutes. Remove the saucepan from the stovetop and immediately stir in 1/2 cup of milk to stop the cooking process. Pour the eggnog into a large bowl and place it in a bowl filled with ice water until it cools to room temperature. Then, place it in a cool place and cool completely.
  • Step 3
  • Remove the vanilla zest and pod from the drink, add rum or bourbon to taste. Pour the eggnog into glasses and sprinkle with nutmeg.
