Wings
  • 2 tbsp. l. brown sugar
  • 1 tbsp coarse salt
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • 2 tsp freshly ground black pepper
  • 3/4 cup olive oil, plus extra for greasing the grill
  • 1.3 kg whole chicken wings
  • 0.5 cup green onions, thinly sliced ​​diagonally, optional

  • 1 cup hot sauce
  • 0.5 cup molasses
  • 4 tablespoons unsalted butter

    Step 1
  • Preheat a grill or grill pan over medium-high heat.
  • Step 2
  • Hot sauce:

    Combine hot sauce, molasses, and butter in a small saucepan. Heat, stirring, until smooth, then set aside.
  • Step 3
  • Wings:

    In a bowl, combine brown sugar, salt, garlic powder, smoked paprika, and pepper. Stir the butter into the dry mixture until smooth. Set aside a quarter of the mixture to brush the wings while frying.

  • Brush the wings with the spice mixture. Lightly brush the grill grate with olive oil, then place the wings on the grill. Grill, covered, for about 10 minutes, then brush with the spice mixture.

  • Flip, baste again, and grill for another 15 minutes. Remove the wings from the grill and toss with the hot sauce in a large bowl. Transfer to a platter and sprinkle with green onions and parsley, if using.
