Use this recipe from Tyler Florence and boil your potatoes with bay leaves to infuse them with flavor from the start.


Ingredients:

  • 1.8 kg peeled and quartered potatoes
  • 1 bay leaf
  • Salt and ground black pepper
  • 2 cups heavy cream
  • 3 tbsp (45 g) butter
  • 2 tbsp chopped chives
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the potatoes in a large saucepan, add the bay leaf, 2 tablespoons of salt, and cover with cold water. Bring to a boil over medium-high heat and simmer until tender, about 20 minutes. Strain well and discard the bay leaf.
  • Step 2
  • Meanwhile, heat the cream and butter in a small saucepan. Press the potatoes through a potato masher or a fine-mesh sieve into a bowl. Add the hot cream, season with salt and pepper. Stir with a spoon and add the chives.
