Ruby Sangria

Wine mixed with fruit and water sounds romantic and summery, doesn't it? But the legends surrounding the origin of Sangria's name are befitting of its name, which comes from the Spanish "sangre," meaning blood. But let's not forget that these are just legends. Today, this popular Spanish drink is beloved both in Spain and abroad. There are no strict rules for its preparation—you can add any fruit and wine you like. The drink's main purpose is to provide a feeling of coolness on a hot summer day.


Ingredients:

  • 2 large pomegranates
  • 2 red Williams pears, seeded and thinly sliced
  • 2 star fruits, thinly sliced
  • 3 bottles of red wine, such as Rioja
  • 1 cup brandy or cognac
  • 1 cup pomegranate juice
  • 0.5 cups of sugar
  • 2 cinnamon sticks
  • 2 star anise
  • 1 liter of sparkling water, cooled
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Cover the countertop with newspaper, as the bright red pomegranate juice can stain. Cut the pomegranates in half; when you open them, you'll find clusters of very juicy pomegranate seeds embedded in the whitish pulp.

    Scrape the pomegranate seeds into a large bowl filled with water. Carefully, using your fingers or a sharp knife, scoop out the ruby-colored pomegranate seeds, removing any bits of bitter membrane that may be stuck to them. Place the pomegranate seeds in a large pitcher or container and add the pear and star fruit slices.
  • Step 2
  • Pour in the red wine, cognac, and pomegranate juice. Add sugar, cinnamon, and star anise; stir well to combine. Chill the sangria in the refrigerator for several hours or overnight to allow the flavors to meld. Just before serving, pour in the sparkling water and stir to combine. Spoon the fruit into glasses or goblets and fill them with sangria.
